2 cups of whole wheat flour
1 cup of natural, unsweetened peanut butter
2 large eggs
1/4 cup of honey
1/2 cup of coconut oil
1/2 cup of grated carrots
1/2 cup of water
Preheat the oven to 350°F (175°C).
Grease a 9-inch round cake pan with coconut oil or line it with parchment paper.
In a large mixing bowl, combine whole wheat flour and grated carrots.
In another bowl, mix together peanut butter, eggs, honey, and melted coconut oil until smooth. Slowly add in the water.
Pour the wet mixture into the bowl with the dry ingredients. Gently fold until just combined.
Transfer the batter into your prepared cake pan and smooth the top.
