Ingredients
5 lbs boneless, skinless chicken
6 cups cooked brown rice
1.5 lbs carrots, finely chopped
12 hard-boiled eggs, diced
15 oz pumpkin puree
4 cups cooked oats
1 cup ground flaxseed
2 cups low-sodium bone broth
Handful of finely chopped parsley
Instructions
1. Cook chicken thoroughly and dice into small pieces.
2. Boil eggs, peel, and chop.
3. Cook oats and rice separately.
4. Steam or finely chop the carrots.
5. Combine all ingredients in a large bowl.
6. Add flaxseed, pumpkin, parsley, and broth.
7. Mix thoroughly until well combined.
8. Cool before serving and portion as needed.
Notes
Refrigerate for up to 3 days or freeze in single portions.
