1 cup of dried lentils
1 cup of diced carrots
1 cup of fresh or frozen peas
4 cups of low sodium chicken broth
1 tablespoon of olive oil
1/2 cup of uncooked brown rice
1 cup of chopped spinach
In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up into small pieces.
Once the ground beef is fully cooked, stir in the diced carrots and peas and cook for another 5 minutes.
